Pomegranate-Pear-Pistachio Salad: Fun with Jars Fridays

Ah hem!

Attention people!

Do I have your attention?

How about now?

Okay just making sure I have your full attention for this.

You are not seeing things. Your eyes are not playing tricks on you. Yes those are pistachios....in a salad. Yes I love pistachios....in a salad. Yes I love pom seeds....in a salad. Yes I love pear....in a salad. Yes I love...oh wait...no I don't....yes I tolerate lettuce...in a salad. And finally, yes finally, yes I love salad.... IN A JAR!!!

You weren't expecting normal were you? Seriously, have you learned nothing by now. I do not colour inside the lines. And yes that is how us Canucks spell colour. C-O-L-O-U-R!  So get over yourselves people.  I am not a redneck, I'm a Canuck. We do not follow rules. And we are polite. So we politely break the rules. And contrary to popular belief I do not:

Have a moose in my back yard!

Say eh constantly. (However I do say dude alot!)

Live in an igloo!

Frolic in the snow year round!

Say hoser all the time. (On occasion just for fun but not ALL the time!)

Drink long necks! (I drink my pepsi from a can!)

Okay now that clears that all up. I feel better now. Hope I didn't offend anyone. *er, sorry it just slipped out* Correction- take that you, you, you... okay I just can't do it.

Alrighty roo folks. So I had some fun again. Fun with Jars! I love this series. It's so much fun. The possibilities are endless. I just want to put the whole world in a jar now. It's just a hoot. I tried to put chips in one the other night but I kept whacking my hand on the mouth of the jar. After about the hundredth time I finally stopped. You know, fast learner and all.

I have seen others do salad in a jar so I had to think outside the box..er..jar a bit to come up with something fantabulous enough to delight you all. I did a search and found this salad HERE. The thing is I don't do spinach. Spinach and IBS do not get along. They fight, bad things happen and I get sucker punched. So I thought of how I could change this up. Then it came to me as I love the artisan lettuce you can buy now. Something about baby lettuces just do me in every time. They are so cute. I also thought I'd switch out the nuts to pistachios and see what happens. OMFG...that's oh my flipping goodness in Canuck just for the record. I loved it with the pistachios. So good. I did not make my own dressing as I was in multi-tasking mode already and that would have pushed the limits of good sense. Plus I'll be honest here, I do not like dressing. I like my salad naked. Seriously, why eat healthy if you're going to just slather oil on it. Makes no sense to me. I mean I'll slather oil on lots of things, I'll even slather butter on things. But to put it on veggies just does not compute in my world. Keep in mind this is coming from someone who had her whole face in jar of black forest cheesecake a couple weeks ago. So clearly don't take advice from me. Unless it's how to slather butter on things. Then I am an expert. Seriously!

Okay so to recap:

I made salad...

in a jar...

I am Canadian...

I say dude too much...

I am a butter slathering expert...

and I am polite...

all while I ride my moose, yelling "eh" riding through the snow towards my igloo drinking a long neck while calling you a hoser! But politely!

Okay so now that we're all caught up, here's your OMFG recipe.

Pom-Pear-Pistachio Salad...in a Jar:

Inspired by: My Recipes(that's the name of the site, it's not actually mine like Lunatic mine)/Sunset- Spinach Pomegranate Salad

(before I continue does anyone else hear the voice of the jalapeno from Jeff Dunham's show every time I say "in a jar"?? No, just me then??)

Ingredients:

1 cup of petite oak lettuce
1 cup of petite gem lettuce
1 cup of petite tango lettuce
1 cup of radicchio lettuce (to be fair I thought this was bitter and might not use it again)
1/2 cup pom seeds ( I bought mine already de-pommed, not sure that's a word)
1 pear, cut into nice little sticks
1/2 cup pistachio nuts, shelled and chopped (start with 3 cups, by the time your done eating it will be 1/2)

Optional:

Icky dressing, the guys used a pom vinegar one I had, bleck

Directions:

Have one huge jar at the ready. I used the 1 L

Cut or tear up your lettuce and set aside. Do not mix colours if going for the layered look in the jar.

Cut up your pear. Set aside.

Rinse your pom seeds. Set aside.

Shell your pistachios and chop. Set aside.

Grab all the stuff you set aside.

Now start with one colour lettuce and place it in the jar.

Now using an alternate colour place that one in jar.

Now place the third bunch in jar, making sure the colours are opposite if you're like me.

Now place the fourth bunch in the jar. Squish it down a bit. Do not get your hand stuck.

Now add the pom seeds and squish down.

Now add the pear and squish down.

Now add the pistachio and squish down.

Now grin like crazy and take a gazillion photos.

Now either eat it like that or pour back out into a bowl.

Slather on some dressing if you're "that kind of person".

Grab a fork and go to town.

While smiling.

Tips and hints:

You can add or subtract any ingredient.

You can layer dressing in it and it would look uber cool, if you're "that kind of person".

I am not "that kind of person".

I am however "this kind of person".

Hubs and B are "these kind of people".

Seriously, ick, bleck, blah, uck, bleh!

But they did it anyway.

For the record mini-me was at school late last night. But I think her exact words would have been OMFG what are you guys eating? Or something like that. Polite right!

Okay so stay tuned for next week's Fun with Jars recipe. The doc said they can schedule me in to have the jar removed from my wrist on Thursday. So I'm all set for next Friday then.

Toodles and smoochies.xx

  1. Are you running out of jars yet? Another great idea! And this can even be eaten on the go .. unless you drop the jar, of course.

  6. All of those layers in that jar do look like the makings of a great salad. Cool idea, putting this in a jar. So much more eye catching than on the plate in my opinion! Enjoy the weekend.

  7. Kim: Where in the world do you buy just the seeds?

  8. Ooooo, salad! I love me some salad. never had it in a jar though...would make it hard to stick my face down in there. I might get stuck, have to go to the ER and then have to sue you for giving me the idea. See what troubles you have caused? Ultimately, I will have a mushed face because of this delicious looking salad.

Erhhhmmm, I', ok now. I think I'll go eat a salad, drink a Coke and say hoser a few times.

  9. What a pretty salad! I love the jar idea. I was reading The Pastry Queen Celebrates just last month and saw my first salad in a jar. I am a newbie to this clever idea.

  10. This is probably the prettiest jar yet, though I can't quite imagine how the eating process would work (I like my salads mixed well). But very cool idea! :)

  11. Pistachios are great on salads! I have a fruit salad recipe that gets topped with them, and it adds the perfect little salty crunch on top.

  12. OMG you did not make a salad in a jar! Haha you are so creative. I love this series. =)

  13. I love that you do fun with jars fridays! Such a fabulous idea. That shepherd's pie you posted awhile back looks AMAZING! And, of course, this salad looks lovely as well. Fantastic!

  14. Hi everyone. Sorry I have been so caught up in some drama unfolding in the foodie world that I have not been responding here. I am reading. And shall visit all you lovely folks later tonight. For now here goes:

@the food dude- Thank you so much!

@ping- Lol, I bought cases of these suckers so hopefully they last all winter. Ya I was considering using them on the go, but I am accident prone. The fam already bubble wraps me when I go near glass.

@Ann- I know eh! A regular hoser I am. I have been seeing these everywhere and just had to put the Lunatic touch on it. Which basically means add pistachios it seems. Thanks my dear!

@Anna- They seem to be all the rage. I just had to try it.

@Dzoli- You must try it. It is more for decorative purposes though. Eating out of normal rims is hard. Wide mouths would be okay though.

@Anne- Thanks so much. I saw them at the market already seeded so I had to splurge. I rarely buy poms as I hate doing the messy bit. This was so much easier.

@Tina- Thank you. I love the way it looks. Although from a practical standpoint it is harder to eat. But it sure looks pretty. I eat mine in a wide bowl most days. Cuz I am a piggie like that. Lol!

@CharlesR- Not sure where you are located but I bought mine at a store called Remark Farms. It's a gourmet market nearby. If you go down the produce section they should be with the fancy dressings and salad add ins. I saw them at a grocery store this way too so I think more places are doing it. And honestly it was no overly expensive at all. I just bought a small tub and it cost me $3.99. I still have lots left so they go far. Hope that helps.

@Janet- Lol, I know eh! I am a havoc causing Canuck hell bent on converting you all to pepsi and making you say hoser. And my evil plan is working. Lol!

@Kristen- I tried to find that and am unsure I am searching it right. I am intrigued to check it out. Can you leave me a link for her? I normally don't allow links but you have my okay to leave it. You have peeked my interest. I always love finding out who people read. If I could make a living reading blogs I would be content as heck. Lol.

@Kiri- The eating process for me was dumping it out into a bowl. Lol! It is pretty but not very practical and user friendly. The cheesecake on the other hand is perfect. If you use a spoon, and not your face. Aka me learning the hard way.

@Jen- That sound awesome. Is that on your blog? Would love to see that. I could be a fruitarian easily. I love it more than veggies. If you it is on your blog feel free to leave me the link to it. Or later this week I'll come poke around. Congrats on the interview and giveaway with Jill. I adore her.

    @Christine- Thank you so much!

@Lindselicious- Lol, nah I just followed a trend. But it was a fun one to follow. This jar series is a hoot and a half.

@rosemarried- Is it weird that I get a little starstruck when you pop by? I keep telling myself "be cool, be cool" but it's just impossible for me to do the whole aloof cool thing. I love that you love this. I also love that you loved the shepherd's pie one. Okay so excuse me while I go tell everyone I know you popped by. Lol!

  22. Stephanie- Amen sister. I want to put pistachios on everything in the whole world. Lol!

@Curry and Comfort- Tomorrow you are going to notice people eating these in cars everywhere. I just have a feeling. Lol!

@Ruth- I am glad you enjoy. I love writing so I tend to have far too much fun blogging. I pretty much only like italian dressing. Not sure why.

@Grubarzzi- Dude, thank you so much. xx

@Sandra- Aw, thanks. I had fun with this one. So pleased it made top 9. Very cool. Chokes me up every time.

@Jenn- Thanks so much. I am so thrilled it made it on there. Pretty cool. Should of used a different pic though I think. That one does not look good small. Lol.

  23. Hi Kim, Melissa here from Food Bloggers of Canada. Just popping by to check out your blog and to let you know we've added you to our Membership Directory. I LOVE your salad in a jar (and what's wrong with pistachios in a salad? they're awesome!) anyway, welcome aboard!

  24. Very very pretty salad. Deserves to be in top 9! Well done! :)

  25. WOW, Kim, you did it again. What a great idea, especially on the go, instead of driving to the nearest drive-thru for those super high calorie snacks.

  26. The salad in a jar is beautiful! I love all the colors! Something to definitely brighten up the winter months!

My daughter has been saying dude a lot too. Is that word coming back??

  29. @Melissa- Thanks so much. I am planning on popping by to say hello. Been a crazy weekend. I was so happy when I found there was a Canadian group. I feel pretty lonely here. No foodie friends from the area. Hopefully I can connect with some. Thanks so much for adding me to the list and for stopping by.

    @firefoodie- Thank you so much.

@Roxana- Thank you! I really had fun with this one. And my goodness this salad is tasty.

@Dionne- Thanks. I really liked this one. I like fruit in my salad, can't help myself. Did it ever go out? Lol. I've been saying it so long I have no clue. Been a fave since the '80's. My brother is often referred to as old dude in conversation.

    @Ann- Thanks so much!

@momdecuisine- It was a hit. The taste was amazing.
