The Hasselback Experiments- Take 1



Hi folks. Okay this is a 2 parter. Yup, I'm getting all fancy and stuff on you. Next thing you know I'll be doing podcasts. Er, maybe not. That would involve being on camera and people seeing the size of my butt. So hm, maybe not so much. Not a big fan of having someone film my butt. Or anything else for that matter.

Alrighty roo, got totally off topic in all of .5 seconds. Might have been a personal record. I mean at least I'm improving at something. Gotta set your goals low so you're always happy. Wait...what....that can't be right. I think I meant to say do everything mediocre so people don't expect much from you. Wait...what...that can't be right either. I think I meant to say aim low so you're never disappointed. Yah, that's the ...well that ain't right either. Okay new rule, Lunie does not give advice. At least not until she's fully fueled up on pepsi for the day. *yawn* Nope not there yet.

Okay so here I shall be showing a hasselback cooked with butter. Then on my losing it site you can go see a hasselback made with olive oil. The thought behind this experiment was to see if there was a huge taste difference. I did the high fat one oozing with butter. I did the low fat one with very little olive oil. I shall tell you which I liked better at the end. I may do more of this type of thing in the new year. Comparisons between the light and the heavy versions. Might be a fun way to try lighter versions of our meals during the week and keep the heavier stuff for weekends only. I have been neglecting my other blog since weevilgeddon hit. With all that's been going on with life keeping up with two blogs was a bit much. I shall post there again sporadically until Christmas is over than get back into one post per day on each. Light healthy lunch on Losing it. Desserts or meals here. I figure we eat two or three times a day so doing 2 is doable once life settles down.

Alrighty now, on with the experiment. A little safety advice first.

ALWAYS WEAR SAFETY GOGGLES WHEN DOING EXPERIMENTS. I know it's not necessary but I would like you to do it and then send me pictures of you doing it so I can laugh at you. I mean *with* you!

MAKE SURE YOU KEEP A SAFE DISTANCE FROM OPEN FLAME.  I say this from personal experience as I caught my oven mitt on fire while gabbing with mini me last week. I have to say I must be the calmest person during a crisis. I just kept talking and cooking and acted like nothing happened. Mini-me was all worried and I was cool as a cucumber. Being Martha during a crisis is one of my many talents. I can juggle too. Not while my oven mitt is on fire but you know, under normal circumstances.

DO NOT TOUCH HOT BUTTER. This advice comes straight from the emergency room. They tell me this constantly! The are discussing a mandatory tattoo on my forehead in a conference room right now. How does "beware of hot butter" sound, or should it be "butter burns, back away", or perhaps "butter hotter than it looks, handle with caution". Right smack in the middle or off to the side?

WHEN USING SHARP KNIVES YOU SHOULD ALWAYS USE CAUTION. I mean we all know this by now right. So I still can't figure out how it landed pointy side down on my big toe. It's a mystery. Hubs is considering wrapping them in hockey tape then wrapping that tape around my hand to be sure. But the worry is I'll just turn around to talk to someone and stab them in the arse or something. Maybe the hockey tape and a cork on the end of the knife. They make hockey tape in pink now right!?

LET YOUR FOOD COOL A BIT BEFORE EATING. This one is something we all know. Yet we get our food and act like toddlers and scarf it then hang our mouths open making stupid faces and trying to blow on food that's already in our mouths, all while trying to look cool and nonchalant about it all. There is nothing cool about someone dancing around in their seat, making weird faces and snorting food all over the place. Slow down people. It will help you avoid that strange no skin on the roof of your mouth feeling later. You've been warned. Doc says mine will be fine in about 2 days.

The Lunatic's Hassleback Experiments- Take 1: 

Dripping with Butter Hasselbacks:


Ingredients:


4 large russet potatoes, cleaned with skin left on
1 cup of butter, yes SERIOUSLY!
Sea salt to taste, I used Himalayan cuz it's pink and pretty

Directions:


Preheat oven to 425 degrees.


Clean your potatoes well with a brush.


Dry them.

Now with a sharp knife cut down into the potato stopping before you hit bottom. You want to leave a gap at the bottom so it does not fall apart. It's tricky the first time. Your natural inclination will want you to cut clear through. Resist and stop.

Now make cuts all the way along the length of the potato. Take a look at the picture and you will see what I mean and how it should look.

Now place them in a parchment lined pan (I line everything, makes clean up a snap).

Now cut your butter into thin wedges. Tons of thin wedges.

Now slip those carefully between all the cuts in the potato.



Sprinkle with sea salt.

Pop them in the oven.

Now baste them every 5 to 10 minutes. Makes a huge difference. That way they don't get all dried out and yucky. Baste the heck out them.

Cook for about 40 to 45 minutes. (Unless you have mutant potatoes like I did, then it could take an hour or up to an hour and fifteen minutes!)

They are done when the flesh of the potato is soft. And it should be turning a golden colour.

Remove and serve.


Looks super yummy right! We had ours with the chicken cooked in tea I did last month. Made for a wonderful meal.

Now for the verdict on Hasselbacks themselves:

Okay so I am going to be honest here cuz that's how I roll. I am not sure if I was expecting too much from these potatoes or what. I think I went into this with super high expectations. I was hoping it would taste like french fries or something. So I was mildly disappointed. Now putting aside my huge unrealistic expectations that somehow slicing them up all pretty would somehow transform the potato into a baked fry, they were really good. My advice would be not to use giant mutant potatoes from Costco though. Mine were excessively huge and they took too darn long to cook. Now I am most certainly making these again and doing more tweaking. I have some ideas to jazz them up and Lunify them.

Now for the verdict as to which one I liked better:

Will it be the dripping with butter version that is is so bad for you. Or the lighter version that won't give you angina. What will it be. Hm. Ah. Thinking. Pondering. It's a pickle. Did I mention I hate pickles? I like potatoes though. But which one? Hm. Ah. Thinking again. Okay. I got it. Are you ready for it? Are you sure? Okay, maybe you better sit down. No seriously. Sit down. NOW.

*cues the drumroll*

Okay folks I have an answer for you. I like the healthy version better. I know it's shocking right.

*runs off to get smelling salts for the mass hysteria*

Okay folks seriously, I like the olive oil version better. Not sure if it's due to the shallots or what. I just liked the taste better. It's funny too as I had oodles and bunches of pics of the lighter one but very few pics of the buttery one. So I suppose that speaks volumes as well.

  1. What a great experiment! I've been meaning to make hassleback potatoes, and well, you know how I feel about potatoes. I'll have to check out the olive oil version, although I have to say the buttery potato is calling to me :-)

  2. ~ I cannot believe you keep two busy blogs going. ~ 1/4 cup of butter per potato????? I think I clogged an artery just reading that. ~ I share that weird ability to stay calm. My daughter had a seizure in Walmart when she was 6 months old and I was the only one who didn't freak out. (of course I did lose it after we got home from the emergency room, when it was all over)

  5. First, I gotta ask, twin, what kinda podcast would you be doing if your butt was in full view?? I am pretty sure there are laws against that so be careful :-p

    Is there an echo in here or is it just me?
    But really... let the poor man go and send him back to his fans in Germany.

    Third... I want those potatoes. With extra butter. Just give me your share. And a Coke. No Pepsi.

  6. @Katherine- Thanks my dear. I have to say I thought for sure I'd go for the butter, but I like the olive oil. Which is SO not like me to like something healthier for me.

    @Kristen- Lol, I know it's a ton of butter. But they were giant mutant potatoes. I would guess the equivalent of 6 to 8 normal ones. That is scary about your daughter. I don't shake till it's all over. But during I am cool. Might be from having Kiana be sick growing up. From the second she was born it was a roller coaster ride so think I just learned never to fall apart.

    @Lizzy- Lol, I had to mention it, it was so earth shattering. Yes we bombed the core just like the movie. Healthy hasselbacks so good. You will love them.

    @Magic of Spice- They are good to me at the hospital. I have one of those fastpasses they give out at Disney for the hospital. Makes life easier. Lol!

    @Janet- Well they don't call it food porn for nothing darin'. *good lord I have been watching too much Kardashians or something*

    The Hoff had it coming. He's been pre-baking for years.

    I shall serve them drizzled in pepsi just for you.

    I wondered if anyone would pick up on that. Lol. Nope I sat on this one for that long. Which is unlike me right.

  8. Sounds like there was quite some chaos in the kitchen! I am leery of getting new sharp knives and your story made it even worse. We all want a sharp cutting tool, but not at the cost of fingers, toes and limbs!
    Love the picture with those big chunks of butter between the sliced potatoes-yum!

  10. I have been wanting to make these for awhile and think you've inspired me to try them this weekend, olive oil style! I always need kitchen tips regarding knives because I usually cut myself about once a week in a chopping fervor. Makes my husband crazy, and queasy!

  11. Sounds like an interesting experiment...kind of glad to know I'm not the only accident prone one out there. I may have to try these...I adore potatoes in the oven and anyway to get them baked a little quicker is ok by me!

  12. I love, love, love Hasselback potatoes! My preference is for butter (and I'm not a butter person) and lots of herbs. However, mine always fall apart a little and yours look perfect!

  14. @Ann- Thank you so much. I had to try it, I thought that butter is always better but it's so not true. Lol!

    @Tina- There is suppose to be a glove you can wear that protects you from cuts. Not sure if it works though. I had a blast with this. That butter was hard to stuff in there. Slippery little suckers.

    @Kiri- I loved it but think it definitely needs some jazzing up. I'd fit right in with your wife and mom. Lol!

    @Maggie- I know I saw a post somewhere that was all about knife safety. If I happen across it I'll let you know.

    @Lo-mo- I have issues with knives, and windows. Accident prone like crazy. Potatoes rock. I could never not eat them.

    @Cucina49- I am in awe of this little potatoes. These are something I plan on tweaking alot over the next months. I think the possibilities are endless for them.
