Melon Salad

Hi folks. This is just a quickie post as I need to hit the hay. Been a long day and have another long one planned for tomorrow. Luckily nothing horrible or stressful. Just lots of soccer and we had the apple festival today, tomorrow is a flea market. Add in barn and soccer games and normal life plus a puppy and it's all the ingredients for one busy lunatic. The good news is I have a fun post for next weeks Farm Fresh Friday.

So this one has been awhile coming. I was not going to post it as the pics are lacking that special something. Also on day two when I wanted to take the pics my fridge did this whole freeze my fruit nonsense. I need to have it looked at as it's a new and pretty fancy fridge. Not pleased at all. Anyhow I decided to post it anyway as I know my foodie friends will still appreciate this and most people will be stunned that I:

ate a salad


ate fruit without sugar on top or placed in ice cream


that it wasn't made into butter


So if nothing else this proves I do occasionally eat something healthy and good for me. I know I have been posting a ton of dessert and ice cream recipes but we actually eat other things. Shocking I know.

So here it is in all it's frozen, craptastic photo glory. Enjoy!

Melon Salad:

Ingredients:


1 cup cut up and cubed seedless watermelon
1 cup cut up and cubed sugarbaby watermelon
1 cup cut up and cubed cantaloupe
1 cup cut up and cubed canary melon
1/4 cup lemon juice
1 to 2 tablespoons honey
Mint if desired


Directions:


Cut up all your melons into small cubes. Place in a bowl.

Take your lemon juice and honey and whisk it together.

Pour your lemon and honey mixture over melons.

Stir until well coated.

Serve.




Yah okay so it was covered in honey. Whatever!

  5. Fresh and simple, your fruit salad looks delightful! I'm envious of your trip to the farmers market! You have so much beautiful produce to choose from! We've had a horrible outbreak of Listeria this year in Colorado so cantaloupe is pretty much gone from our markets.
    I'm looking forward to reading more of your posts!

  9. I just went to a luncheon and the fruit salad was the first to go! It has a nice touch of sweetness while still being healthy-your salad looks wonderful!

  15. Honey = perfect timing. The Jewish New Year is coming up, and honey is a big symbol for the holiday! So I say go for it. Drench that melon salad in sweetness. Can't hurt! (love the addition of mint, too...)

    @momdecuisine- Thanks. I love honey as does mini-me so we use it alot. It's also good for other things. She uses it on horses for abrasions. Weird but true.
