Hi folks. Hope everyone is enjoying their *cough* Saturday. I love *cough* Saturdays. I mean don't you just love *cough* weekends. I find them so relaxing. Luckily I was all prepared and had this post ready for *cough* Saturday. I mean I am nothing if not *cough* organized.
Okay so confession time. I usually buy my pizza sauce. Not always but often. I suppose I just figure all the other work I put in making the dough, cutting up all the ingredients, shredding oodles of cheese should be enough. Every now and then I cave and make it from scratch. I like mine super sweet though so feel free to adjust the sugar. I won't be offended. I mean after all it is *cough* Saturday so I'm all chill and stuff.
Sweetums Pizza Sauce:
(My sister will be laughing now as that's one of her nicknames for me! The sweetums part, not pizza sauce cuz that would be weird!)
Ingredients:
3 cans of whole, peeled tomatoes (28 fl oz/796 ml)
1 can tomato paste (5.5 fl oz/156 ml)
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon basil
1 tablespoon oregano
2 to 3 tablespoons sugar (or a truckload if you are like me and just keep adding more as the day goes on)
4 bay leaves
Directions:
Toss everything in your slow cooker and turn on low.
Cook for about 6 to 8 hours. Stir occasionally.
If you find it getting too thick just add a little water and stir it in.
Once it's done remove your bay leaves and you're good to load this on some pizza.
You can store it in the fridge for a few days.
You can store it in the freezer for a couple months. Freezes nicely.
Tips and Hints:
I don't like mine all chunky and neither does mini-me, so I'll pop hers and mine in a blender to break up any remaining chunks. The guys like chunks so I usually do some pizza chunky and some not.
As stated I like my sauce sweet. I have a tendency to just keep adding sugar. No clue how much ends up in there by the end of the day. But you should start with a couple and adjust from there. Always better to start small and work your way up.
You can jazz this up with just about anything. Cayenne pepper would add some zing as would red pepper flakes. You could mix in infused oil. The possibilities are endless.

I am going to have to do this. Making pizza sauce is my least favorite part of making pizza...weird, I know, because it only takes a minute the way I do it, but still, the idea of putting it all in a crock pot and letting it make itself sounds better. (wow that was a long, run-on sentence!)

Now that pizza has apparently become a synonym for dinner around here, I'll be trimming the last eggplant from the summer garden, simmering some sauce and doing the cast iron pan version with the New York style crust. Not enough time to make the slow cooker sauce, but I think I might do that for future "dinners." I would guess I could can the finish product in a hot water bath an not affect the flavor. Yes?
@unorthodoxepicure- That made me crack right up. We eat so much pizza around here I'm surprised we don't do the same thing. And my daughter works at a pizza joint on top of that. Eggplant on it would be super yummy. I did a thicker crust in a cast iron and it works perfect. I am loving my new cast iron pan. Had no idea these things kicked butt the way they do. I do not do canning so not an expert but I would guess the hot water bath would not affect the taste at all. In fact I almost wonder if it would enhance it. Like a nice double simmer. I'd go for it. I have to learn how to can. Now I want to can pizza sauce.

I have to say I am the same way. I usually just use pasta sauce or do tomatoes in the blender. But this was fun and useful for freezing.

@Sandra- Here too. Some days I'm the queen of quick, some days I am the queen of taking my time. I rarely do things the same way twice. I love oregano but it can be strong. Just leave it out and do just basil, sweet basil. Super yum!
@Jeff- Thanks, it came out great. I do both. Sometimes I like to just buy it and some days I like concocting my own versions. No day is ever the same here.
@Tina- I am always dreaming up new stuff for pizza. I should open a pizza/ice cream shop I swear. Hope you try this out with one of the doughs. The parmesan dough is nice too.
@Kelly- I always pull the slow cookers out come winter. I use them in the summer too. Great way to cook up chicken before grilling it.
