Apple, Orange and Fennel Salad: Guest Post by Eat Yourself Skinny


Hi folks. I have a very special treat for you today. The lovely, talented and drop dead gorgeous Kelly from Eat Yourself Skinny is guesting here today. For those of you who do not know Kelly she is the sweetest gal around. She describes herself as snarky and well that just makes me love her to pieces as I consider myself pretty snarky. She has the cutest little dog named Oliver and every time I see him I grin as he's just so cute. One day I plan to go on a blate with Kelly while Malia and Oliver go on their own date. Kelly makes the most delicious "good for you" food I have ever seen. Her pictures and presentation are always so bright and pretty. Her recipes never fail to impress. She writes about her own issues trying to maintain her weight and healthy lifestyle, and I admire her for sticking with it. She has found a way to eat great food and not feel deprived, and if you've seen her blog you know why. I know for me struggling with my own weight and unhealthy habits that I love visiting her site and getting ideas and motivation to keep going. I've already told Kelly I plan to live at her blog after Christmas. I need that kick in the pants to get myself back on track and visiting Kelly and seeing her beautiful food and killer figure is sure to inspire me to eat right and hop on the treadmill every day. Hello there lovely readers of Cravings of a Lunatic!  I’m Kelly from Eat Yourself Skinny and I was so glad when Kim asked me to guest post for her over the holidays.  I absolutely adore her blog and have been a follower for awhile now, her posts are just so fun to read!  When I knew I’d be sharing a recipe around Christmas, I wanted to make something super festive but that was still somewhat healthy.  I mean my blog is “Eat Yourself Skinny” after all, gingerbread cookies and peppermint bark wouldn’t exactly fall into that category.  Umm lemme tell you…it is nearly impossible to find festive healthy recipes for the holidays.

Trust me…I looked.

So instead of doing a low calorie cookie recipe or any dessert for that matter, I decided to go with one of my favorite holiday fruit salads that taste amazing with almost anything!





Our family has this salad on the table every year during Christmas and the mixture of apple, orange and fennel tastes so delicious.  You can even throw in some dried cranberries for a more festive look.  I didn’t have any on hand at the time so I just left the recipe as is.  The addition of lemon is essential not only to keep the apples from browning, but it really brings all the flavors together in this dish.  This is also heart healthy and diabetic friendly!  Hope you enjoy this as much as I did!

Apple, Orange and Fennel Salad


Here are your ingredients:
Recipe adapted from Better Homes and Gardens

1 Tbsp lemon juice
1 Tbsp cider vinegar
1 Tbsp canola oil
1 tsp. snipped fresh thyme
1/8 tsp. salt
1 medium apple, cored and chopped
1 medium orange, peeled, seeded, sectioned and chopped
1 small fennel bulb, trimmed, cored and chopped
1/4 cup chopped pecans, toasted

In a medium bowl, whisk together lemon juice, vinegar, oil, the 1 teaspoon thyme, and salt.  Stir in apple, orange and fennel.  Cover and chill for 1 to 4 hours.  Stir in pecans just before serving.  If desired, garnish with additional snipped fresh thyme.  Enjoy!

    I do have a tendency to pick things out of salads, but I have read the ingredient list here and I like it all. Hurrah-this means the whole serving will actually be eaten without any remnants left on the plate, which is definitely a win! Thanks for sharing this tasty recipe and you two enjoy the day!

  19. @Notes- I have to travel to the city for thyme myself. Hard to get in a small town. I lol'd when I read that comment about Kelly. If it will I am eating huge amounts of it myself. The girl is gorgeous. I hope the suggestions help. I've had insomnia since childhood. It's rough. I find the hot chocolate helpful. Or do all of them so you get into a routine. Draw a bath, then spray your sheets when you get out, then sit in bed with a hot chocolate with honey and off to snoozeland you go. I thought the caffeine would keep me up but something about the warm milk and honey just works.
