Fruity Cherry and Coconut Bars for Secret Recipe Club

Hi folks. Today is reveal day for the Secret Recipe Club. I am going to do something very un-Lunatic like and make this a snappy post though. I am quite sick and it's late, and I really need some rest. I have to go out tomorrow even though I am sick. Mini-me's last class of her first semester of Uni so I am driving her in. So here's hoping I can sleep tonight and tomorrow goes smoothly.

I was assigned the blog Bizzy Bakes this month. I had a hard time finding a recipe to do simply as there was so much yummy goodness to choose from. I almost picked the whoopie pies but due to my flu like state I went another route. Something simpler, easier to make. I choose her fruity bars and just tweaked it mildly. More due to trying to cut the prep time due to my feverish state than anything else. Not to self, make the assigned blog recipe weeks in advance. That way when you get the flu you are covered. Live and learn. Make sure you stop by Bizzy Bakes to see the original and to say hello. Lots of goodies over there to tempt you.

Fruity Cherry and Coconut Bars:

Recipe adapted from Bizzy Bakes

Ingredients:

1 cup dried cherries
1/2 cup flaked coconut
1/2 cup canola oil
2 eggs
1 teaspoon vanilla
1 cup flour
1 teaspoon baking soda
1/4 cup dark brown sugar
Pinch vanilla salt

Directions:

Preheat oven to 350 degrees.

Pop all your ingredients in a bowl and stir until combined. ( I know you should separate and do this more carefully but I was sick and figured this type of recipe could withstand haphazard ingredient tossing, I was so right, worked perfectly!)

Pour into a greased cast iron pan and smooth out.

Stick in the oven for 20 to 25 minutes.

Remove and let cool.

Serve with a smile.

Go lay down cuz your sick!

So please swing by and say hello to Bizzy Bakes today. And if you're interested in joining the Secret Recipe Club swing by there and sign up.

Also make sure you visit some or all the other SRC people linked here. It would make me feel better. But no pressure or anything. I mean it's not like I am sick and you should feel bad or anything. No...really.

Okay I am now officially woozy and off to bed. Night all.

Toodles and smoochies.xx

I have got the yuck too-took some sinus medicine yesterday and slept for 4 hours. My sinuses are even making my teeth hurt. I hope you feel better soon.

  16. @Tina- I love cherries and coconut. I thought the same thing when I saw this one, low ingredients which worked well for what I wanted. Super yummy too. Sorry you are sick too. Nothing worse than being sick. Except being sick with a puppy who will not leave you alone for 2 seconds. Arg! Lol!

@Pinay Tina- Thanks so much. I loved this one. Super easy to make. And thank you. I am hoping to be right as rain soon.

@Yummy Mummy- Thanks. I love my skillet. Just got one this year and am wanting to use if for everything. Lol!

    @Emily- Thanks!

    @Lisa- Aw, thanks so much!

@Kristen- Thanks, just feeling super yucky lately. Hopefully it goes away soon. Cranky as heck today which I hate. I agree, cast iron just makes things look homey and old fashioned or something.

@Dee- Thanks doll. Feeling like crapola but I'm sure it won't last long. I lucked out getting Bizzy, lots of yummy stuff to make.

@Jane- Thanks so much my dear. I had fun with it even though I was sick. Nothing like baking to cheer a gal up. Looking forward to next month already, lol.

@Sylvia- Thanks, I love this pan. Should have bought one eons ago. I'm sure I'll be my old self in a day or so. God help you all. Lol!

@Ann- Thanks so much. Looking forward to hearing all about your trip!

@Manu- Lol, it's such a great combo. I'll save you a slice. And thanks. Sure it won't last long.

@Bizzy- I am SO glad you stopped by to see them. I had a blast doing them. I really wanted to make your whoopie pies but just didn't have the energy to tackle something I've never made before. I think I may buzz back and try them out when I feel better. I was honored to get your blog and had lots of fun poking around.

@Curry and Comfort- I get weird when I'm sick. I want to cook and crave thigns like tacos and BBQ chips. No idea why. It's so flipping weird. I am tired though. I started to run out of steam while I was shooting the pics. Which is why there isn't a gazillion like there usually is. Lol!

@Kiri- Coconut highs are the best. Lol! I could eat/drink/ and bath in coconut I swear. I should be living on an island somewhere. I'd fit right in.

@Ruth- You are so sweet. Thank you so much. I am an oddball when it comes to be being sick. I still like to cook. It's very strange. Lol!

@Jennifer- Thank you so much. I am loving the SRC, so much fun.

  25. I'm sorry to hear you are sick. Hope by now you are little better after your daughter's being home. It's amazing you can pull this off when you are sick. It must be very easy recipe or you are very good at baking (I'd have no energy or motivation to bake - even without sick no motivation to bake arh!). I'm going to check Bizzy Bakes. It's very catchy name!
