Vidalia Onion Pizza for Meatless Mondays



Hi folks. I am back with a Meatless Monday option for you all. I actually made this weeks ago, I just had not gotten around to posting it. It was really good but the pictures do not quite do it justice. The taste is phenominal I have to say. I have had this marked to try for years. I finally got around to it. I cook more from just getting in there and doing than from cookbooks. So I tend to save and flag tons of stuff I never get around to making. I think I shall try to get better about digging into my extensive list of things I've bookmarked online or flagged in cookbooks. It's always fun to try new things and new techniques.



We are trying to do meatless a couple of times per week. Mini-me is a flexitarian (thanks to Flex Your Food for teaching me that term). She grew up as a vegetarian, the kid just hated meat. Now she eats a little. But we try to reduce our consumption of it for obvious reasons. We are huge animal lovers so we are trying to make some changes. I do not think I could ever be full on vegan but I for sure see us eating less and less meat as time goes on. Plus it's healthier for you so that's a huge perk. We don't eat lamb, veal or game of any kind. We tend to be an anti-hunting family. I have nothing against anyone who hunts though. Life is personal, make your own decisions is my way of thinking. One of my besties has a hubby who is a huge hunter. For me I can co-exist without getting riled up. To each their own. I won't eat the meat but it won't stop me from visiting and hanging out. My world is wide open, I never force my views on anyone around me, or make anyone feel bad. I eat meat so who am I to judge how anyone gets theirs. None of my beeswax is how I view that. And most things in life to be quite honest.



To explain how much of an animal lover I am I shall tell you a little story. About a month ago when we moved over to the new barn we brought hubs out to put some new hooks and storage in our locker. It was pretty late in the evening when we made the trek home. The barn is out on a back road in the county. I am a control freak so I was driving, not hubs. I am bopping along and all of a sudden I see a possum run into the street and freeze like a deer in head lights in front of my car. I hit the brakes while trying not to kill us or the possum. I can see the little guys eyes as I am trying to slow down. I come to a stop and am right over the poor thing and have no idea if I've hit him or not. I'll be honest when that poor little possum looked at me I may have shut my eyes so I didn't see myself make impact. So I jump out of my SUV, shaking like a leaf. Hubs hops out too. And I run around trying to see if I have in fact hit the poor little thing or not. We both checked under, around, in front, behind and everywhere near my SUV. Then we hear this snickering, almost yelling type noise from the ditch. There the little guy was running off yelling and cursing me out the whole way. All I can say is thank goodness my SUV is a big tank of a vehicle. I think because it sits so high I was over him but never hit him. As we walk back to the car I am literally wiping tears. I must say you gotta love hubs and mini-me who were with me. Neither of them made a fuss over my tears. They know I am not demonstrative and that the best course of action is to ignore it and don't baby me. So I stopped my tears and was so relieved the little one was okay. I have never hit an animal yet. I know one day it is inevitable. But for now my record is clean and I breathed a sigh of relief. While being bitched out by a little wee possum from the field as he ran away. I know this makes me silly and pathetic but I am okay with that. I am who I am as Popeye would say. So that is me in a nutshell. All kinds of crazy and a huge animal lover. I once stopped traffic, including semi's, to help kittens cross a road that got separated from their mom. Hubs was not pleased I stopped our car sideways so no one could pass either way until the kitties were out of danger. Yup, I have issues. All kinds of issues. I am always careful when I do these things. People first, we learned that in the horse world. People first, animals second, things last. This is the rule when you fall off. Check the rider, then check everyone else nearby, then check the horse, then you can check your tack. Sadly I know this well as I fall off....ALOT!



Okay so I should stop boring you with stories now. So much talkie talk and not enough munchie





Vidalia Onion/No Breathalyzer Pizza:


Recipe adapted from Weight Watcher Magazine, Perfect Food, Perfect Health

Ingredients:

Pizza dough (theirs calls for hot roll mix but I used my plain dough recipe)
Pizza sauce (I just used pasta sauce with some sugar mixed in it)
Non stick spray
2 1/2 teaspoons olive oil
6 cups slivered Vidalia or Sweet Onions
1 1/2 cups Swiss cheese, shredded
1/2 cup Parmesan Reggiano, shredded

Directions:

Divide dough in half. Hand toss or roll out your dough. Set aside.

Preheat oven to 450 degrees.

Now spray a pan with non stick spray, add in your olive oil and onions. Cook over medium heat until the onions start to caramelize. This takes about 20ish minutes. (And smells flipping awesome.)

The onions will be golden brown when down. You can pop them on a paper towel to absorb extra oil if you like.

Now smooth out your pizza sauce on it. For this pizza you don't want too much sauce. Less is more on this one.

Now add your Swiss cheese over the pizza. You are making two so divide evenly.

Now add you your onions. You are making two so divide evenly.

Now sprinkle your Parmesan Reggiano over top. You are making two so divide evenly.

Pop the pizza in the preheated oven for about 10 to 15 minutes. Top should be be browning when done.

Remove from oven and slice.

Serve with a smile.


Looks good right!? I know you want some. But I sort of ate it all.


I mean who would leave any when it's this dang good. Not me. I was inhaling it as fast as I could take pictures.

  1. I'm with you for the animals. I cry when I see an animal hurt (even in animation movies ... yeah, I know, dumb) but not so much for a human. (Maybe I was an abused animal in my past life?)
    And I love the blog name ... fitting and fun!
    (Are you sure your horse isn't purposely making you fall off?) :D

  2. This is my favorite pizza! I usually add a few slices of pepperoni, but I guess that wouldn't work on Meatless Monday. :) Great recipe!

  3. I totally feel you! I hit an armadillo one time and cried for like 30 minutes! All the while my husband (who's from Texas) kept tell me not to worry, there were plenty more in Texas which just made me feel worse!

  4. Ha! My son is a flexitarian too! We were so happy at Thanksgiving when he tried a piece of turkey! I also have the habit of bookmarking tons of recipes in cookbooks and magazines, but I rarely get back to making them. This pizza looks great! My husband love pizza loaded with every meat know to man, but I'm sure he wouldn't turn this one down it looks soo good!

  6. Wow, this looks delicious! :) We do something similar in Germany (minus tomato sauce) called Zwiebelkuchen, which is essentially a thin, savory tart with lots of onions. :)

  7. @Ping- I am pretty sure she is. Every time it happens I see her smirk! I was a puddle when I watched Hachi and also Marley & Me. Kiana wants to go see War Horse on Christmas and I am sure I am going to bawl like a little baby.

    @mjskit- Lol, not for Monday but any other day it would. I love me some pizza, any excuse to make it is good in my book.

    @Jen- Lol, that is what most Texans would say I think. I know I have a friend in Oregon who laughs at me cuz out there hitting stuff is a regular thing. For us here in town it's just not. Not a ton of wildlife here. We have coyotes and deer, plus small things like raccoons and possums. No moose or elk or bear. Thank goodness.

    @momdecuisine- I used to take Kiana in for regular blood work as she had health problems we had to check and her levels for everything were totally normal even though she did not eat meat. So for sure this thinking we need all that protein is way off. I still haven't gotten her to eat any bird. She has birds so it just won't fly. *ha could not help myself*

    @Parsley Sage- Lol, that would make most people rethink things. I am a beef fan and chicken. I just try to watch where I buy it. Lessens the guilt. And thanks.

    @Kiri- Thanks. The recipe I followed did not use sauce but I knew mini-me would want it. That tart sounds delish. Caramelized onions rock, as do caramelized shallots.

  9. I think you just dialed my number with this pizza. I have been leaning towards only meatless pizzas these days (the pepperoni and sausage thing is not for me anymore). I would love this pizza!! What a great recipe!

  10. That is a great-looking pizza. And I hear you on being an animal lover--I braked for a squirrel the other day on a busy road, and my husband reminded me that I seem to like animals better than I like people.

  11. I had horrible pizza last night and was thinking about your pizza crust recipes in my mind, but being polite to the people that brought the pizza I was eating. Sadly, this person owns a restaurant..Your pizza here looks so delicious.
    I took defensive driving and the man said that if you see an animal in the road-head straight for it rather than getting into a wreck and hurting yourself. I wonder if he realized that his statement goes directly against human nature.

  12. Oh Kim, your stories are always so entertaining! I hit a squirrel one morning not too long ago and I felt really bad about it!

    I like to go meatless at least once a week too, though it is really hard to get my husband on board as he pretty much dislikes all vegetables except corn! UGH!

    @Tina- Lol, that must have been awkward for sure. I am glad you like my pizza creations. I sure like making them. I think we have had pizza 4 out of 5 nights now. It's quite crazy. I could just see myself arguing with your instructor. I get his reasoning but in the moment you automatically don't want to kill the cute animal. It's just how the brain works.

    @Stephanie- Thanks. It happens. I am shocked that at 42 I haven't hit anything yet. My hubs and son are really easy going so I am pretty lucky. Mini-me on the other hand...lol!
