Butter Pecan Ice Cream for Ice Cream Sunday


Hi folks. I know this looks really good, I know you are in awe of my awesomeness, I know you are probably wondering how we can eat ice cream when it's so freaking cold outside. It is a hard concept. All I can tell you is it's warm and toasty in the house. So that's the loophole. See you now know the secret of the universe. I probably should have kept that to myself. Er, forget I said anything. There's no loophole. Hey what's that behind you??? *tries to edit quickly*

We went out to the barn today to see horsey. I was so pleased when the farrier turned up. Not because he's a total cutie patootie (cuz he totally is) but because he brought his girlfriend with him. His lovely girlfriend is an old friend of mine and mini-me's from the days when we first boarded our horse. Mr Cutie Patootie walked in and when I stopped staring looked around there was his darling girlfriend. I adore this girl and have such fond memories of her from years past. She is older than mini-me but she was one of the only ones who didn't care about stuff like that and took mini-me under her wing and made her feel welcome. Mini-me is very shy. Back then she was uber shy. This young gal made sure to always talk to her and I remember finding them sitting under a tree outside talking one day. I am ever grateful to Anna-Marie for always being kind to my daughter. I had not seen her in years. We keep in touch via facebook but that's not the same. So today was a wonderful day where I got to catch up with an old friend. Love days like that. Doesn't hurt to have some eye candy wandering around in the background either let me tell you. So now that I've fully embarrassed myself and can never show my face at the barn again here's some other eye candy for you.



Butter Pecan Ice Cream:

Ingredients:

1 cup dark brown sugar
1 cup whole milk
Dash of vanilla salt
2 cups heavy cream
1 and 1/2 cups chopped pecans
1 teaspoon vanilla
3 tablespoons butter

Directions:

In a stand mixer combine the sugar, whole milk and salt. Mix until sugar dissolves.

Now add the heavy cream, pecans, vanilla and butter. Mix again for a few minutes.

Cover and stick in your fridge for 1 to 2 hours.

Remove from fridge and transfer liquid to your FROZEN ice cream maker bowl. Set the bowl on to the machine.

Turn on and let it churn for about 15 to 20 minutes.

You can serve immediately or stick it in the freezer until you are ready to serve it.

If you freeze it make sure you take it out about 5 to 10 minutes before you want to scoop it.

Serve with a big smile.

*Yields 5 cups*






Moral of today's story:

Eat a lot of ice cream even when it's cold, unless you are a farrier cuz you are going to bend over a lot in front of lots of silly women and we want you looking fine and svelte for us. Yes it's a double standard. I'm okay with that.

  3. Ah ha! We know about your ice cream loophole now! :) So you got to "gwak" at some hot stuff and eat some cold stuff... I see that as a win-win. I'm glad your daughter and you found an old friend. She seems like a nice person. :) Lovely ice cream!! It's one of my favorite flavors. PS.. congrats on TOP 9 today (twice)! Way to go!!

  4. I think I actually snorted out loud reading this. Really, Kim, I need to read your posts when I am all alone.

    That ice cream sounds so good...well, maybe not while we are experiencing another cold snap with stupid "emergency" heat, but in a few days when it's 75 again.

  6. One thing I've never been called: eye candy. It could be that I'm the guy who eats plenty of ice cream, regardless of the weather. Yours looks outstanding, by the way! The ice cream, that is.

    1. Hey that just ain't right. So I now declare you eye candy. Every dude needs to be eye candy in their lifetime. I'm telling you girls swoon over dudes who can cook. A guy who can cook ice cream gets marks way higher than any Brad Pitt or flavour of the month.

  7. ha ha! Too funny! How come no shots of "Mr Cutie Patootie" to share with the rest of us!? No fair! Poor guy, probably totally mortified! Hooray for eye candy! And Ice cream! Especially Butter Pecan which is my fave! Going to try and make a sugar free version of this for my low carb thing going on! I love that you have lots of nuts in there, just how I like it! You rock Kim Bee! I totally heart you!

  14. Kim Bee, I think I said it before.. you're such an amazing ice-cream queen. I have been bookmarking so many of your ice-cream recipe. Probably I should just have an ice-cream party and 'force' all my friends to eat them. LOL.. that way I get to try out all of them.. hehe... What I really like about it is I can eat one sample of it and be okay. It's not something I want to eat the whole pint of. I love it but I seem to have good self control with it. Other things not so much.

    1. Lol I was worried but I seem to be able to control myself with it unlike sweets. It's cool too cuz you can do sorbets which are healthy. I mean in theory you can, I just never seem to. Lol!

  22. I enjoy a good butter pecan ice cream, but love it mainly b/c it brings back great memories of seeing my father indulge in sweets for the first time as a kid. I always saw him as the serious pastor, no time for foolishness, but to see the big kid smile on his face as he burrowed into the bottom of the butter pecan gallon of ice cream made me see him differently that day, and definitely made me smile. Thanks for bringing back great memories, I hope to make this recipe for him someday, I know it will mean a lot to him =]

  24. Kim...butter pecan was my dad's favorite, too. And I eat it every year now on his birthday. I've yet to make my own. But let me tell you...I can (and do) eat ice cream all year round! Glad you got to visit with some old friends. And yes....I am TOTALLY in awe of your awesomeness!!! : )

    1. Oh nut allergies are tough. I think it would be the one thing if they told me I was allergic to that I would cry like a baby. I eat nuts every day. Must be hard to keep it at bay, so many things have it inside. I am so glad they label stuff now.
