Hi folks. Yes I am late with my ice cream post. I apologize. I am way behind on my posting. But if it's any consolation I am behind on just about everything. This week has been nuts. Lots going on. I feel like it's a good thing summer has come to an end so I can get organized and get my house back under control. I end up spending so much time with the kiddos that everything else falls by the wayside. So after 2 months of them being home I need a break so I can get stuff done. They need to return to school if for no other reason than I need to clean the house and do some paperwork. I love them being home way too much. I figured it was our last summer together so I may have over done it a wee little bit. Lol!
So I am continuing for a bit longer with my ICE CREAM SUNDAYS. It is still summery here and to be quite honest I still have a few cool ones up my sleeve. So here's my plan so you know what to expect. I am going to keep them up until September 25. That will be my last ICE CREAM SUNDAYS post for this season. I shall do it with some fanfare. I am planning a huge post to wrap up ICE CREAM SUNDAYS. It needs a fabulous finale. So make sure you mark your calendars, this last one on September 25 will knock your socks off. So once ICE CREAM SUNDAYS concludes I've decided to start a winter series to take it place. So on October 2nd you can look forward to SLOW COOKER SUNDAYS. Yup, you heard that right. SLOW COOKER SUNDAYS will be taking the place of ICE CREAM SUNDAYS on October 2nd. Mark you calendars yet again. Now to decide which of my slow cooker recipes to post first. Ah, so many choices. It boggles the mind.
So this week I made s'mores ice cream. For some reason I hadn't tried that one yet. So had to do it before the cold weather blows in. I made a few adjustments to the recipe I found. If I can give you a tip for this ice cream it's this- do not put the freaking fluff in the fridge and try to scoop it easily into the ice cream maker. Holy snikeys people, what a freaking mess. Gobs of sticky icky marshmallow fluff everywhere. I swear even the kitten managed to get some on him. He really needs to stop sitting at my feet while I cook. There may or may not be fluff in my hair as well. I am quite certain it is on my clothes. For sure it's on my laptop. Now that I think of it there may not actually be any in the ice cream. It's stuck everywhere else but goodness knows if any actually managed to make it into the ice cream maker. Another tip- I used these really cool cookies. They are like a graham cracker but they have chocolate already on them. Mini-me's friends use them for actual s'mores. They save a step. Chocolate and cookie in one. You cannot go wrong with that. Here's what the box looks like so you can scour your stores for them.
Yup, they are super yummy. Not quite a graham cracker but man oh man they sure are good. If you are worried the taste of graham is not prevalent enough then you can just toss in some graham crumbs. I always have some on hand for making cheesecakes and whatnot.
So are you tapping your fingers impatiently yet? Just give us the dang recipe you lunatic. Geez, there's no need to be rude. You should go have a bowl of ice cream and calm yourself down a bit. Here try this one.

S'mores Ice Cream:
*Recipe adapted from Cuisinart*
Ingredients:
1/2 cup cocoa
1/3 cup sugar
1/4 cup dark brown sugar
Pinch of vanilla salt (normal is fine)
2/3 cup whole milk
1 1/2 cups heavy cream
1 teaspoon vanilla
3/4 cup marshmallow cream aka fluff
12 chocolate covered cookies (1 cup), crushed
1 cup milk chocolate chips
Directions:
In your mixer combine cocoa, sugars, and salt.
Add the whole milk and whisk until sugars are dissolved.
Stir in heavy cream and vanilla.
Cover the bowl and set in fridge for 1 to 2 hours.
Remove from fridge and pour mixture into your ice cream maker freezer bowl.
Turn on and mix for about 10-15 minutes.
Now add your fluff, chocolate chips and cookies and mix for another 5 minutes.
You can serve immediately or stick it in the freezer until you are ready to serve. Just remember to take it of the freezer for about 10 minutes before serving if freezing.
Looks yummilicous right!
